Easy Shepherd’s Pie πŸ‡¬πŸ‡§

Shepherd’s Pie is a classic in British cuisine and this Easy Sheperd’s Pie recipe could not get much easier. Whilst I am a firm believer in making things from scratch, Colman’s Shepherd’s Pie Mix is pretty hard to beat for ease and flavour. It offers the extreme savoury factor that a great Shepherd’s Pie requires. Easy Shepherd’s Pie

Let’s get cooking…

Ingredients

  • MASHED POTATO TOPPING
  • 2 pounds potatoes (I use Yukon Gold)

  • 1 teaspoon salt

  • 4 tablespoons unsalted butter

  • 1/3 cup half & half

  • 3/4 teaspoon salt

  • 1/4 teaspoon onion powder

  • 1/8 teaspoon garlic powder

  • 2 tablespoons chives (chopped)

  • 3/4 cup strong cheddar cheese (grated)

  • black pepper to taste

  • FILLING
  • 1 medium medium yellow onion

  • 1 1/2 pounds ground beef

  • 2 teaspoons Worchester Sauce

  • 1/2 teaspoon salt

  • 1 packet Colman’s Shepherd Pie Mix

  • 1 cup water

  • 1 1/2 cups frozen mixed vegetables (I use carrots and peas)

  • black pepper to taste

Directions

  • MASHED POTATO TOPPING
  • Peel and chop 2 pounds of potatoes. Rinse the potatoes under cold water to remove excess starch and then place them in a saucepan. Cover the potatoes with water and add 1 teaspoon of salt. Bring to a boil, then turn to medium heat and simmer until the potatoes are tender. Strain the potatoes and place them in a bowl.
  • Add 4 tablespoons of unsalted butter and 1/2 teaspoon of salt and mash the potatoes. Add 1/3 cup of half & half, 1/4 teaspoon of onion powder, 1/8 teaspoon of garlic powder, 2 tablespoons of chopped chives, 3/4 cup of strong cheddar cheese (grated) and pepper to taste. Stir to combine all the ingredients and set aside.
  • FILLING
  • Peel and dice 1 medium yellow onion. Heat 1 tablespoon of olive oil in a casserole pot, add the diced onion and sautΓ© until they are translucent. Add 1 1/2 pounds of ground beef, 2 teaspoons of Worchester Sauce and 1/2 teaspoon of salt. Cook until the meat has browned.

  • Pour the sachet of Colman’s Shepherds Pie Mix into a Pyrex jug, add 1 cup of water and stir until it makes a gravy. Add this mixture to the ground beef mixture and stir to combine. Add 1 1/2 cups of frozen mixed vegetables (I use carrots and peas) and black pepper to taste.Β Stir to combine.
  • ASSEMBLY
  • Pre-heat oven to 375Β°F.
  • Place the ground beef mixture into the bottom of a 9 x 9 baking dish. Top with the mashed potatoes and grate a little extra cheese on the top. Bake for 30-40 minutes. I recommend placing the 9 x 9 dish on a larger tray in case any liquid bubbles over the edge of the pan when cooking.

Tips & Bits

  • I like to use extra lean ground beef, around 90%.
  • Whilst you could use any cheese in the mashed potatoes, strong cheddar cheese offers the best flavour.
  • Sometimes a lot of moisture can come out of ground beef when it is being cooked. If this happens, reduce the amount of water from 1 cup to 3/4 cup when mixing up the Colman’s Shepherd’s Pie Mix.
